Designed as an evolving dining experience, each evening spotlights a different region, allowing guests to experience the distinct flavours, traditions, and culinary stories that define North India’s rich food heritage.

The journey begins with Kashmir Wazwan Evenings on 14th and 15th August, where guests can savour the elegance of Kashmir’s celebrated royal feast. The menu features signature Wazwan delicacies including Rogan Josh, Gosht Yakhni, Rista, Dum Aloo Kashmiri, Nadru Yakhni, and fragrant Kashmiri Pulao, complemented by freshly brewed Kahwa poured from a traditional samovar, recreating the warmth and hospitality of a Kashmiri gathering.

On 16th and 17th August, the festival moves to the bustling highways of Punjab with the Punjabi Dhaba Festival, celebrating bold flavours and generous hospitality. Guests can enjoy live tandoor specialties, smoky grilled kebabs, rustic dhaba-style curries, freshly prepared Amritsari breads, timeless favourites like Butter Chicken and Dal Makhani, alongside refreshing classics including Lassi and Chaas.

The vibrant energy of the capital comes alive on 18th and 19th August during the Delhi Street Food Carnival, where the city’s iconic food culture takes centre stage. Live chaat counters, succulent kebabs, freshly prepared roomali rotis, Mughlai classics, and beloved street food favourites recreate the lively atmosphere of Old Delhi’s bustling lanes and legendary food markets.

The celebration concludes on 20th and 21st August with Royal Rajasthan Nights, paying tribute to the royal kitchens of the desert state. Guests can indulge in a live Dal Baati Churma experience alongside celebrated regional dishes such as Laal Maas, Ker Sangri, and an assortment of traditional Rajasthani breads, showcasing the bold spices, resourceful cooking, and regal flavours that define the cuisine.

The Dessert Studio offers a fitting finale with a curated selection of regional Indian sweets, featuring Jalebi with Rabri, Ghewar, Kesari Phirni, Moong Dal Halwa, Kulfi Falooda, and other traditional desserts inspired by the featured destinations, celebrating India’s rich confectionery traditions.

Complementing the culinary experience is a thoughtfully curated beverage programme inspired by each region. Guests can enjoy refreshing non-alcoholic creations including the Himalayan Mint Cooler from Kashmir, Punjabi Badam Lassi, Delhi Shikanji, and Kesar Badam Thandai from Rajasthan. For those looking to raise a toast, signature cocktails such as the Saffron Gin Tonic, Delhi Spice Mule, Patiala Old Fashioned, and Royal Rajasthan Sour offer contemporary interpretations of regional flavours. Guests can also enhance their dining experience with a Beer Upgrade at INR 400++, which includes two Indian premium pints.

Whether rediscovering cherished regional favourites or exploring new flavours, Northwest Frontier Cuisine offers guests an immersive dining experience that celebrates India’s culinary diversity, craftsmanship, and traditions, making it the perfect way to commemorate the spirit of Independence Week.
