19th May 2025: Hilton Mumbai International Airport is excited to announce “Saudade & Spice: East Indian Food Memories,” a three-day culinary pop-up taking place this May. This event celebrates the rich heritage of the Indo-Portuguese community. In collaboration with veteran chefs Altamsh Patel and Michael Swamy, the pop-up highlights the artistry of traditional cuisine. Every course will be expertly paired with VEEN Water, our esteemed official natural mineral water partner, to elevate the flavours and create a truly mindful dining experience that delights the senses.

The menu features nostalgic dishes inspired by personal and community traditions, including Fish Chinchoni, Bandra East Indian Lamb Chops, Bhujing Arancini, Risoles, and Khimad, a spiced tea and gin beverage. Main courses include Curried Lamb with Lentils, Veg Lonvas, and Matharpacadi Roast Chicken, all served alongside traditional sides such as Fugeas, Chitaps, and earthy salads. To conclude the meal, guests can indulge in desserts like Indrani Rice Crème Brûlée, Lethri with Ice Cream, and warm Water Chestnut Sheera, making this pop-up a true celebration of heritage and flavour.
